You thought that a holiday menu was only cooked indoors? Think again! As I say in all my classes, anything that can be cooked in a conventional oven can be done on a BBQ and be even more delicious!
I'm here to help you plan your holiday menu (5 extra courses, yes sir!) with original and delicious recipes, easy to make using your BBQ!
Start off in style
Impress your guests with a dish that will make you look like a professional chef: homemade smoked salmon!
Nothing is easier to do when you have the smoking maze A-Maze-N ! Marinate your salmon in a brine of half salt and half sugar in which it will soak for 24 hours in the fridge. Remove the excess and rinse. Now you are ready to smoke ! Fill the A-Maze-N with pellets and place it on the grill inside any BBQ. The smoke is then activated just as easily.
Then place the salmon on a plate next to the Smoking Maze so that the action begins. Close the BBQ lid and let the magic happen for about 8 to 12 hours, depending on your taste for smokiness! Finally, refrigerate the salmon for another 24 hours, and it will be ready to serve for your dinner!
The comforting sequel
What's more comforting than a grilled vegetable soup? A grilled vegetable soup on the BBQ! You can go for it simply with a well-seasoned butternut squash , cooked indirectly on your BBQ, and peppers cooked on our BBQ vegetable rack .
For a more chic touch, you can add a spoonful of sour cream and the toasted pumpkin seeds.
The main course
Don't hesitate to think outside the box and swap the traditional turkey for duck breast! The flesh of duck breast is red, and is much closer to red meat than poultry. Its layer of fat makes it a piece of meat that is ideal for cooking on the BBQ. Do not remove it, but rather make grid-shaped incisions, without touching the flesh, and you will have tender and juicy meat!
Grilled asparagus on the BBQ with a little lemon juice and roasted potatoes will go well with this dish!
Cheese service… reinvented!
We are used to seeing the traditional cheese platter between the main course and dessert. What if I told you that I have a sickening recipe for serving cheese on the BBQ? Now that's original! A melted brie, anyone? Using our salt board, which you will have previously heated, you can place your brie on it, as well as a few toppings like cranberries, pecans and a drizzle of maple syrup. Good in yeule as they say!
The grand finale!
We finish our fireside dinner in style with a decadent Christmas log, Julie’s famous Christmas log with BBQ Québec spices!
Don't be put off by the steps, it's easier than it looks!
