It’s time for Quebec strawberries! So tasty, I cook them in 1001 ways. My very first BBQ dessert recipe is this strawberry pudding recipe. It was while making this dessert, well before my adventure at BBQ Québec, that I understood this: “If you can make it in an oven, you can also make it on the BBQ. (I add And it will be even better!)”
For those who have a smoker, dare to use it for desserts. I made this pudding last year at BBQ Camp. Since I had about a hundred servings to cook, I opted for the pellet smoker. The light maple smoke enhanced my dessert, as if by magic.

Preparation time: 15 minutes
Cooking time: approximately 40 min
Ingredients :

2 pints of Quebec strawberries; washed, hulled and cut in half;

¼ C and ½ C white sugar; divided;

1 cup all-purpose flour;

2 tsp baking powder;
-
1 pinch of salt;
-
¼ cup softened butter;
-
1 egg;
-
½ cup milk;
-
2 tsp vanilla extract;
Preparation :

Preheat BBQ to 400℉, with indirect heat in the center of the BBQ;

In the bottom of a cake pan or cast iron skillet, toss strawberries with ¼ C white sugar, set aside;

In a bowl, mix the flour, baking powder and salt using a whisk;

In another bowl, cream the butter and ½ cup sugar until crumbly;

Add the egg and vanilla, then mix;

Add the dry ingredients and milk and mix until the dough is smooth;

Pour into the mold, over the strawberries;
-
Cook indirectly at 400℉ for 35 to 40 minutes, rotating a quarter turn halfway through cooking.;

Let stand for a few minutes then serve with vanilla ice cream or whipped cream.
Tips:

Of course, you can replace the strawberries with raspberries, blackberries, cherries or blueberries;

Fans can even add rhubarb.
