About a year ago, I heard about the ketogenic (Keto) diet and all the benefits it provided. After several months of intensive education on the subject, in order to fully understand the concept, the do's and don'ts, the eats and don'ts, I decided to start this "diet", or should we say "lifestyle".
By mixing BBQ and Keto, I managed to take back control of my health AND lose ¼ of my total weight, or 50 pounds in 6 months, and this almost without changing my diet. More good fats, less pasta!
The concept of the ketogenic diet is to enter a kind of "survival" mode, in ketosis, which will allow fat to better metabolize lipids and thus convert fats into energy. Generally, it is carbohydrates (carbohydrates) that provide the energy necessary for the body to get through the day. When we want to get into ketosis, we must reduce our carbohydrate intake (bread, pasta, potatoes, sugar) and stay focused on good fats. To stay in ketosis and thus transform fats into practical energy, we must eat about 75% lipids, 20% proteins and only 5% carbohydrates.
Although they don't grill well, olives and avocados are incredible sources of good fats. Luckily, they can be eaten cold! Coconut oil and clarified butter (ghee) are the best fats to use for cooking. Other than that, a mind-boggling amount of steak, bacon, chicken and cheese can be devoured during the day. This is where it starts to get interesting!!
There are some great books, websites and articles on the subject, it's very easy to get into this wave that is currently hitting many Quebecers. What's interesting about the "Keto" diet is that it goes perfectly with the BBQ. For the occasion, I'm offering you today a decadent Keto breakfast recipe (and even if you're not Keto, I swear you want to try it!!)
We feel it is important to point out that several of our spices are Keto approved, such as California and Argentina which have 0 sugar. Our Explorer spices are very low in sugar and can be used in a Keto or low-carb diet.
BBQ sauces are mostly high in sugar and should be used sparingly for best results. However, our Ketchot sauce does not have an astronomical amount of sugar, it is an original and delicious replacement for traditional Ketchup. The important thing is to be happy, so treating yourself to a little Ketchot sauce once in a while won't hurt anyone.

Ingredients:
- 4 eggs
- 8 slices of bacon
- 4 heaping tablespoons of Philadelphia cheese
- 2 lawyers
- 1 lemon
- BBQ Explorer Quebec Dry Marinade
- Firebarns Sri Racha Sauce
Steps:
- Puree the avocados into guacamole, adding fresh lemon juice to taste. Refrigerate.
- Cook the bacon slices on a Baconizer and scrape off the bacon fat.
- Place the bacon fat on a baking sheet, cast iron, stainless steel, cookina or simply in a pan, above your side burner or directly on the grills of your BBQ.
- Crack the eggs into the bacon fat and let them cook slowly. Add the Explorer spices to the eggs while they are cooking.
- On the plate (or in the taco), in order: eggs, Philadelphia cheese, bacon, guacamole, a shot of Sri Racha Firebarns, and off we go to glory.
