When I was very young, ribs were far from being one of my favorite dishes. I found that they often lacked flavor, tasting only of sauce. The meaty taste was not there since these ribs had been boiled. Over time, ribs quickly became my favorite dish. Even today, it is the thing that I am most passionate about cooking, because it is easy to make them good, but very difficult to make them perfectly. This is how, always looking for new cooking techniques, I discovered the Presto BBQ rib rack.

The Presto BBQ is an accessory designed to help you make the best ribs, in any BBQ, even gas. It allows you to smoke your ribs, while keeping a very high humidity in the BBQ. They will be tender and juicy, and since they will not be boiled, they will taste like meat! The Presto BBQ is a stainless steel rib rack that is installed above an aluminum pan.

Simply pour your favorite beer into the bottom of the aluminum dish, then add cherry, apple and/or hickory wood chips , and don't forget to put your favorite dry rub on the ribs. For my part, I mix Tex-Max and Kansas dry rubs from BBQ Québec. Then, place the ribs on the rack. Preheat the gas BBQ to 325°F, then turn all burners to minimum, before placing everything on the grill and closing the lid. While cooking, it's time to invite your friends! After 45 minutes, add a second aluminum dish, upside down, on top of the one containing the ribs, to make an aluminum "box". All you have to do is let everything cook for 1 hour and 15 minutes, and your ribs will finally be ready. All you have to do is brush them with your favorite sauce, then grill them for 2 minutes per side, to caramelize the latter. You will then be able to enjoy high-quality ribs, cooked on your gas BBQ!

Charcoal lovers, fear not, you can use this as a regular rib rack, with the option of adding any liquid to the bottom of the aluminum pan and collecting the drippings. You don't have to add any chips to the bottom of the pan, as you can just put them right in the charcoal like you normally would, and your ribs will be in the perfect place to smoke! Depending on the recipe you're following, the beer can also be replaced with wine, juice, or even Dr. Pepper! The possibilities are endless; you can even use it as a heat deflector, to hold your steak once it's done searing.
