BBQ Turkey Drumsticks and Wings

Pilons et ailes de dindon au BBQ

Today I'm showing you how to make REAL turkey drumsticks and wings! My recipe is very simple; it takes a little time and a lot of love, but the result is definitely worth it!

Here's how to make this awesome meal:

Servings: 2 // Preparation time: 10 minutes // Cooking time: about 50 minutes // Total time: 1 hour

Ingredients :

For the turkey:

For the dip:

  • 1/2 orange pepper, cut into small cubes

  • 1 green onion, chopped

  • 1 avocado, mashed

  • 2 tbsp labneh cheese

  • 2 tbsp. Quebec Dragon BBQ sauce

Required tools:

Preparation :

  1. Preheat BBQ to 400°F.
  2. Place the butter in an ovenproof bowl, pour in the bourbon and sprinkle with Booster flavor enhancer. Place the bowl on the BBQ in an indirect cooking zone and let the butter melt. Set aside when the mixture is very liquid.
  3. Carefully remove the skin from the turkey drumsticks, without removing it completely (it will cover the meat again later).
  4. Fill the injector syringe with the liquid butter mixture and inject it into the turkey wings and drumsticks to thoroughly fill the pieces of meat.
  5. Season the wings with Booster Flavor Enhancer, then with a mixture of Sweet Kansas, Tex-Max, and California dry rubs. Do the same with the drumsticks, but add the small amount of Booster Flavor Enhancer to the inside of the skin of the turkey drumsticks, rather than directly on the meat, so the skin will be crispy and delicious when cooked. Cover the drumsticks with their skin, then season the outside of the drumsticks with Booster Flavor Enhancer and the same mixture of Sweet Kansas, Tex-Max, and California dry rubs used previously.
  6. Once everything is well seasoned, place the turkey wings and drumsticks on the BBQ, in the indirect cooking zone, and let everything cook for a good 30 minutes. Turn the wings and drumsticks over, then let them cook again until the internal temperature of the meat pieces reaches at least 165 °F*.
  7. To crisp and lightly char the skin on the wings and drumsticks, move the pieces of meat to a direct heat zone and grill for 1 to 2 minutes on each side.
  8. While the meat pieces are cooking, mix all the ingredients for the dip in a bowl.
  9. Serve the turkey wings and drumsticks, then savor each bite by dipping the pieces of meat into the dip.

* If you want meat that shreds easily and is really tender, cook turkey wings and drumsticks until they have an internal temperature between 185°F and 190°F.
