General Tao's BBQ-style chicken from Quebec

Again me and my generally successful attempts at recipes that I made in the oven before working for BBQ Québec. Now, I cook almost everything on my new BBQ. I find that it gives an interesting taste to the dishes that I was used to eating and cooking. I am leaving the family nest soon and I am happy to see that my terrace is covered and that I will be able to install my charcoal BBQ and my propane BBQ there so that I can continue to concoct recipes for you 365 days a year.

My weekend recipe was a "General Tao chicken" BBQ Quebec style. The weather was nice and warm so my friends enjoyed this Saturday night recipe accompanied by a small glass of sangrillé (or 2). I'll reveal the secret of my recipe for having a pleasant meal with family or friends... and that doesn't take hours to cook.

**Chicken can be replaced with tofu

Servings: 4

Preparation time: 30 minutes

Cooking time: 30 minutes

Ingredients :

  • 5 tbsp soy sauce
  • 10 tbsp chicken broth
  • 5 tbsp rice vinegar
  • 1 tbsp minced ginger
  • 3 to 4 cloves of chopped garlic
  • 6 tsp cornstarch
  • 2 to 3 tsp paprika
  • 2 tsp sambal oelek
  • 3 to 5 tbsp. Quebec BBQ espresso sauce
  • 1 cup sugar
  • 3 tbsp water
  • 3 Peppers (color of your choice)
  • 1 Cup of oil
  • 6 Chicken breasts
  • ¾ cup flour
  • Chopped green onions to taste
  • Rice or rice vermicelli

Preparation :

  1. Cut the chicken breasts into strips (I use scissors) and set aside
  2. In a small bowl, mix well the soy sauce, broth, rice vinegar, ginger, garlic, cornstarch, paprika, sambal oelek and espresso sauce then set aside.
  3. In a saucepan, mix the sugar and water. Bring to a boil then add the soy mixture. Bring back to a boil, whisking continuously then remove the sauce from the heat.
  4. On a baking sheet on your BBQ, brown your peppers, previously cut into strips, then set aside.
  5. In a large bowl, season the chicken with salt and pepper to taste, then add the flour. Mix everything together so that the chicken is well coated, then shake off the excess flour.
  6. On the cooking plate of your BBQ, brown the chicken strips until they reach an internal cooking temperature of 165°F then set aside.
  7. Cook the rice or rice vermicelli.
  8. Place the rice vermicelli or rice on a plate, then add the chicken strips, sauce and previously chopped green onions.
  9. Enjoy!
