Who has never bought small pizza bites at the supermarket? I think we have all done it and every time, the following comment comes back: it just tastes like tomato dough!! Today, we make our own bites, to our taste and well filled, for a fraction of the price.

Ingredients
- Pizza dough (see other recipes)
- Pizza sauce
- Dried pepperoni meat, summer salamis and pancetta in cubes.
- Pizza Mozzarella Cheese
- THE California BBQ Spices Quebec
- A All-in-One
- BBQ Quebec Pizza Stone
- a mini muffin pan
- Start the All-in-one in pizza mode as usual ( see the steps here ).
- I always say not to use a rolling pin, but today we're going to need one! Spreading a good layer of flour on our work surface, we're going to flatten the dough well with the rolling pin so that it's thinner than for a pizza.
- Once flattened, take a glass to cut out perfect circles, depending on the size of your mold. Place each round of dough at the bottom of the mold and press down to make it fit well.
- Afterwards, all that remains is to fill the inside with the chosen ingredients like a pizza. Remember to press the ingredients to make sure there is no empty space left inside.
- Add pellets to your charcoal to create a flame and place the pan on the preheated pizza stone (preheat your stone for 20-25 minutes at 700 F and above for best results). You want the pan and stone as close to the door as possible (away from the fire to allow the dough to cook).
- Once ready, sprinkle with California spices and let sit for a few minutes. You will see, these bites will become a ritual for you!
