Pork Chops on Portobello Mushrooms

This quick and easy pork recipe is very effective. It really is a good meal (which is also lactose-free!) that will please everyone!

Here's how to make this awesome meal:

Ingredients (for 3 servings):

Preparation :

  1. Preheat the BBQ to 450-500°F, making sure to create a direct and indirect cooking zone*.

  2. Place 1 tbsp duck fat in the center of each portobello mushroom (where the stem would be), then place each one on the BBQ grill in the indirect cooking zone; top of the cap facing down.

  3. Let the duck fat melt, then sprinkle the Explorateur dry marinade over the mushrooms.

  4. While the mushrooms are cooking, sprinkle Jamaican Jerk Rub on all sides (even the edges) of the pork chops to create a light crust.

  5. Make sure the direct cooking zone is very hot**, then sear the chops on both sides.

  6. Place the chops on the mushrooms and let everything cook in the indirect cooking zone***.

  7. Using a knife, cut the cheese into very thin slices and the tomato into thin slices.

  8. Place the tomato slices on top of the chops, then sprinkle a little California dry rub on top.

  9. Add the cheese slices on top of the tomato slices and let it cook.

  10. Meanwhile, prepare the accompanying sauce by mixing the yogurt with a little Caribbean dry rub and California dry rub, honey (I recommend heating it before adding it so it is more liquid) and cilantro leaves in a bowl. Set aside.

  11. Remove the meal from the BBQ when the pork chops have an internal temperature between 130 and 135°F.

  12. Let the meat rest for a few moments, then serve the meal with the sauce on the side.

  13. Slice the meal and savor every bite!

* If you are using a charcoal BBQ, place the charcoal on one side of the BBQ and make sure it is hot enough. If you are using a gas BBQ, you can turn the burner on indirect to minimum if you wish.

** If using a charcoal BBQ, blow on the coals before placing the pieces of meat on the grill so that they are well stoked.

***If the BBQ lid has a chimney, make sure to place it above the indirect cooking area when installing it on the BBQ.
