Every year, Max and JP cold smoke salmon. Their recipes are always a great success, both in their families and at events, and they are very proud of them.
For them, however, homemade smoked salmon had no equal in grocery stores, so when they got the request to create smoked salmon, they worked on a recipe and finally found something that satisfied their taste buds and their quality standards.

Why did you create this product?
Cold smoking your own salmon is a process that requires a lot of time and specific equipment. It is also something that cannot be done year-round in Quebec because the outside temperature must be between certain degrees for the "cooking" to be safe. So we cannot all afford to do it whenever we want.
When the opportunity to put cold-smoked salmon on grocery store refrigerator shelves was presented to Max and JP, however, they jumped at the chance. It makes smoked salmon accessible to everyone, 365 days a year, and requires no cooking from people, which is what interested them in the project.
Another reason why the Lavoie brothers decided to launch this product is that, as mentioned above, the smoked salmon already on the market are, according to Max and JP, not up to par with those that people can prepare at home. They therefore want to offer them a tasty, high-quality product, with a real smoked taste and not an artificial one.
It should also be mentioned that cold smoked salmon is a more popular product than hot smoked salmon and that it keeps longer, which is why it is an interesting product to work on.
Who is this product for?
This product is truly made for everyone. Smoked salmon lovers, in particular, this is for you, especially if you find that those offered in supermarkets lack a little taste, a little "wow".
What does this product taste like?
Max and JP have created perfect smoked salmon. They seasoned them with a secret blend made from their dry rubs (the famous BBQ Québec dry rubs) and made sure the salmon had a real smoky taste.
Each slice of smoked salmon also has a nice "spice crust", which is clearly visible through the packaging. As JP likes to say, when the products are good, we put some, it's not an ointment, so these well-seasoned slices will please your taste buds with every bite.
The slices are also thick, which contributes greatly to the texture effect in the mouth. Max and JP wanted the slices to "melt" in the mouth, but also to be able to "bite" into them. This aspect gives them more flavor and makes them more interesting to cook with.
How to enjoy this product?
As much as the slices of this smoked salmon can be enjoyed as they are, they can also be incorporated into various recipes (especially given their thickness!).
They can be easily added to a poke, for example, or even on a bagel or with boiled eggs.

- In a poke, with pieces of avocado, cucumber, and onion, slices of hard-boiled eggs, capers and a little mayonnaise.
- On a bagel with cream cheese or Tex-Max BBQ Québec sauce, sliced green olives, onion pieces and California BBQ Québec dry rub, or a different combination of these ingredients. (For a fresher version, replace the bagel with cucumber slices and opt for cream cheese and capers instead.)
- With boiled eggs, mixed with a little mayonnaise.
