Vegetarian Breakfast Sandwich and Burrito

Today, I present to you two succulent recipes: a sandwich and a breakfast burrito!

The recipes I'm going to show you are vegetarian, but you can replace the plant proteins with animal proteins (like beef patties and pork sausages, for example) if you prefer. Also, you can let your imagination run wild and use different ingredients than mine if you want. In any case, the recipes I give you are really "solid" and are excellent to enjoy before starting your day!

Without further ado, here's how to make them:

Breakfast sandwich

Required tools:

  • Small cast iron skillet

  • Thermometer

Ingredients (for 1 person):

  • Butter (or ghee), for cooking

  • 1 egg

  • Tex-Max BBQ Quebec dry marinade , to taste

  • 1 plant-based burger patty from Vegeat BBQ Québec

  • 1 English muffin

  • Sweet pepper mayonnaise, to taste

  • 1 slice of sharp cheddar cheese

Preparation :

  1. Preheat BBQ to 400°F.

  2. Add the butter (or ghee) to the pan, place the pan in a direct heat zone on the BBQ grill and let the fat melt.

  3. When the fat is melted, crack the egg over the pan.

  4. Season the egg with Tex-Max dry marinade and when it is cooked through, remove it from the BBQ and keep it warm.

  5. Place the burger patty on the BBQ grill and cook over indirect heat until it reaches an internal temperature of 160°F.

  6. Sear the patty for about 30 seconds on each side to grill. Set aside.

  7. As far away from the heat source as possible (in other words, on the top rack or in an indirect cooking zone), toast the English muffin on both sides so that it is nice and crispy.

  8. When the English muffin is ready, cut it in 2, then start assembling it by spreading sweet pepper mayonnaise on one half of the English muffin. Place the burger patty on the mayonnaise, the slice of cheese on the patty, then the egg on the latter. Top it all off with the other half of the English muffin.

  9. Serve and enjoy!


Breakfast burrito

Required tools:

  • Large cast iron skillet

  • Thermometer

Ingredients (for 1 person):

  • Butter (or ghee), for cooking

  • 4 eggs

  • ½ onion, finely chopped

  • Tex-Max BBQ Quebec dry marinade , to taste

  • Grated cheese, to taste

  • 1 plant-based vegetable sausage Vegeat BBQ Québec

  • 1 tortilla

  • ½ avocado, cut into small cubes

  • ½ tomato, diced

  • Spinach, to taste

Preparation :

  1. Preheat BBQ to 400°F.

  2. Add the butter (or ghee) to the pan, place the pan in a direct heat zone on the BBQ grill and let the fat melt.

  3. When the pan is hot, add the onion pieces. Season them with Tex-Max dry marinade and let them roast (making sure to stir everything from time to time) until they are nicely browned. caramelized and a little crispy on the outside.

  4. Add the eggs to the pan and mix well.

  5. When the preparation is ready, add plenty of cheese to the pan so that it melts and creates an incredible result. Mix everything together.

  6. While the cheese melts, cook the sausages on the BBQ grill in the indirect cooking zone or in the direct cooking zone on the top rack, away from the heat source, until they have an internal temperature of 160°F.

  7. Grill the sausages on each side until crispy. When ready, remove from the BBQ and cut into small slices (ideally on the bias).

  8. Start the assembly by spreading some sweet pepper mayonnaise on the tortilla, then adding the sausage slices and the avocado and tomato pieces inside it. Cover everything with spinach, then add the onion, egg and cheese mixture.

  9. Roll the tortilla up, serve and enjoy!
