When I was asked to write a vegan blog post, I immediately thought of my family's famous falafel recipe. I don't know about you, but more often than I think, I eat vegan or vegetarian without even thinking about it. We find ourselves in a world that is increasingly aware of taking small actions in our daily lives that will help our planet.
So here is my recipe for spicy falafels.

Cooking time: 15 minutes
Preparation time: 30 minutes
Ingredients :
- 1 can of chickpeas
- 1 clove of garlic
- 1 small red onion
- 3 teaspoons flour
- The juice of half a lemon
- Coriander to taste
- Parsley to taste
- 2 teaspoons of Tex Max dry marinade
1- Place the drained chickpeas in the container of your food processor.
2- Chop the garlic and onion to add to the chickpeas.
3- Mix everything for a few seconds and then add the rest of the ingredients.
4- Re-mix for a few more seconds. *Be careful, the texture must not be smooth!*
5- Form about 12 falafels and cook them indirectly at 400 °F for about 20 minutes.
6- Serve on a pita with hummus, fresh vegetables and sesame butter or on a couscous salad!
Tip: The cookina baking mat is a nice tool for cooking falafels.
