Plum, prosciutto and honey appetizer pizza
As a huge pizza fan, this one is always a hit when I entertain. Although this pizza is made with "out of the ordinary" ingredients, my guests are always surprised by the result; they never thought a plum pizza would taste good!
This mix of sweet and salty will make you want to eat more than just one slice, I guarantee it! ;)
Ingredients :
1 homemade or store-bought pizza dough

3 very ripe plums cut into 4 or 6 depending on the size of the fruit
170 g of peppered or plain goat’s cheese
4 sprigs of fresh thyme
6 slices of prosciutto
1 cup baby arugula
2 tbsp honey
Balsamic vinegar caramel
Zest of ½ lemon
Olive oil
Texas BBQ Quebec spices to taste
Preparation :
Preheat the BBQ Québec pizza stone for about fifteen minutes using indirect cooking on a BBQ at high temperature.
In a bowl, mix the plum pieces with a drizzle of olive oil, a tablespoon of honey and the thyme leaves, then season with Texas spices to taste. Set aside.
Slice the goat cheese into rounds. Set aside.
Spread the pizza dough and top with the plum mixture. Add the goat cheese slices on top.
Using the BBQ Québec pizza spatula, place the pizza on the BBQ.

The pizza is ready when the crust is cooked through and golden brown, the cheese has melted and the plums have softened.
Remove the pizza from the BBQ, top with the prosciutto slices and baby arugula leaves. Drizzle the lemon zest, remaining honey and a drizzle of balsamic vinegar caramel over the top of the pizza.
Season with Texas spices to taste and drizzle with olive oil.
Cut into 6 to 8 pieces with the BBQ Québec pizza cutter and enjoy!
