Peanut Butter Banana Bread

It's so easy to make banana bread!

Besides, who doesn't have bananas lying around the house? Personally, I think that if I didn't use them to make banana bread, I would waste a lot of them...

I find that it is the fruit that ripens the fastest on the counter: we buy 4-5 at a time, then one day, without realizing it, POOF! they are all blackened!

So, to avoid waste, why not give yourself a little challenge and try to cook banana bread on the BBQ? I did it and it was a success, so I am happy to share my recipe with you!

By the way, a little tip: if your bananas are ready to be transformed into banana bread, but you don't have time to cook one right now, I recommend putting them in the freezer. This way, before you start preparing it, you can take them out a few hours before to defrost them or put them in the microwave for a few minutes.

Ingredients :

  • 4 very ripe bananas
  • 1 cup brown sugar
  • 3 eggs
  • ½ cup vegetable oil
  • 2 tsp baking powder
  • 2 cups whole wheat flour
  • ½ cup peanut butter, softened
  • ½ cup milk
  • Quebec BBQ Cake Spices , to taste
  • Mixed nuts (your choice), to taste (optional)

Preparation :

  1. Preheat BBQ to 350°F.
  2. In a bowl, beat the eggs together.
  3. In the same bowl, add the brown sugar and mix everything until the mixture turns pale and is smooth and homogeneous.
  4. In a second bowl, mash the bananas, then add them to the mixture in the first bowl.
  5. Add the oil and milk to the mixture, then mix well.
  6. Add the dry ingredients (baking powder, whole wheat flour and cake spices) to the bowl one after the other, mixing well between each addition. Once this is done, add the butter peanut, then mix everything one last time until the preparation is smooth and homogeneous.
  7. Transfer the preparation into a container that can go on the BBQ.
  8. Sprinkle the top of the mixture with mixed nuts (optional).
  9. Place the dish on the BBQ and cook the preparation in an indirect cooking zone for about 1 hour or until a toothpick inserted in the center of the banana bread comes out clean.
  10. Serve and enjoy!
