Oatmeal, Matcha and Chia Seed Wake-Up Muffins

I have been a fan of matcha tea for a few years. Its taste is excellent (to give you an idea, it is similar to green tea, but much more intense), but what I find most interesting about matcha is the effect it provides to the body and generates against fatigue.

Indeed, make yourself a drink or a snack with this green tea powder and you will stay awake much longer than with a cup of coffee for example. Matcha is versatile: it can be prepared in iced latte, latte, hot drink, fudge and many other combinations!

So with all this in mind, I had the idea to add some to my breakfast muffins. It must also be said that in addition to helping me wake up in the morning, matcha gives a pretty green color to the muffins, which gives them a fun "little extra". While working on the recipe, I also took the opportunity to add chia seeds (which are so good for your health), because I thought it's much easier to eat them in muffins than in yogurt for example (for me anyway).

So here's how to make my recipe for oat, matcha and chia seed muffins:

Ingredients :

  • 1 cup oatmeal
  • 1 cup milk (or plant milk)
  • 2 eggs
  • 1 cup white or whole wheat flour
  • 5 tbsp matcha
  • 2 tbsp Quebec BBQ Cake spices
  • ¼ cup brown sugar
  • 2 tsp baking powder
  • ¼ cup vegetable oil

Preparation :

  1. Preheat BBQ to 350°F.
  2. In a large bowl, mix together all dry ingredients (oats, flour, matcha, cake spice, and baking powder) except brown sugar. Set aside.
  3. In another bowl, whisk the eggs.
  4. Add the brown sugar to the bowl containing the eggs, then mix everything together until the mixture becomes slightly lighter in color and smoother.
  5. Add the oil to the egg and brown sugar mixture and mix again.
  6. Transfer the dry ingredient mixture to the bowl containing the liquid mixture and mix the mixtures together.
  7. Add the milk, then mix well to obtain a smooth and homogeneous preparation.
  8. Divide the mixture into a 12-muffin pan.
  9. Place the mold on the BBQ and cook the mixture over indirect heat for about 30 minutes or until a toothpick inserted in the center of one of the muffins comes out clean.
  10. Serve, enjoy and appreciate the benefits of matcha and chia seeds!
