For me, a potato gratin is a comforting dish that goes well with almost any meat! Here is a reinvented gratin that will make you fall in love with traditional cuisine again.

Ingredients :
- 3 large yellow potatoes
- 1 large sweet potato
- 2 yellow onions
- 2/3 cup 15% cream
- Grated cheese of your choice (I used a mixture of 4 store-bought cheeses here)
- 1-2 sprigs of fresh rosemary
- California BBQ Quebec dry marinade to taste
Preparation :
- Preheat your BBQ to 350 °F .
- Slice the onions into rings, peel all the potatoes and cut them into thin slices;
- In a small bowl, combine cream, chopped fresh rosemary and sliced onions.
- Add California dry rub to cream mixture to taste;
- Start the layers of the gratin with potatoes, the cream mixture, the sweet potatoes in the middle and repeat until the gratin is assembled **;
- Place a good amount of cheese on top of the gratin as well as California spices!
- Cook in your BBQ using indirect cooking for approximately 1:20.
