I will always remember the time when I lived in Alberta with my parents and my mother sold cretons to my father's Quebec co-workers because it simply didn't exist there.
Which proves that you can leave Quebec, but not do without its cuisine! 😉
So here is my cretons recipe inspired by my mother’s, but with my twist !
Ingredients :
- 1 ½ lbs ground pork
- 2 slices of bread
- 2 onions
- 1 cup white wine (or chicken broth)
- 1 cup of milk
- 1 tablespoon Dijon mustard
- Montreal BBQ Quebec spices , to taste
Steps:
- On the BBQ, grill the slices of bread for about 30 seconds on each side and the whole onions until they blacken.
- Dice the onions and slices of bread.
- Place all ingredients in a saucepan and stir generously. Place the saucepan in the direct cooking zone and let everything cook on the BBQ for about 1 hour 30 minutes; always stirring regularly. Adjust the seasoning if necessary.
- Let stand for at least 2 hours before putting the cretons in jars or freezing them.
On toast or bagels, these cretons are a real treat!
