Crème de légumes sur le BBQ

The end of summer means abundant harvests! Many of you have taken advantage of this summer at home to develop your green thumb and start a vegetable garden at home. Well, now it's time to harvest the fruits of your efforts, all these beautiful vegetables, ready to be grilled on the BBQ!

Psst. This recipe is also good with fresh, seasonal vegetables from the local market, if you are less handy with soil. 😉
What's more comforting than a good vegetable cream on the BBQ? It's so simple to make, but we don't often think about it. I find that cooking vegetables on the BBQ adds so much flavor to a soup. And when you add the California BBQ Québec dry marinade , it becomes magical!

The crucial step in this recipe is marking your vegetables, this is what will give that distinctive good taste of grilled food on the BBQ.

Here is my basic recipe. You can obviously change the vegetables to make use of those you already have in your fridge.

Preparation time: 15 minutes

Cooking time: 45 minutes

Ingredients :

  • 2 Italian tomatoes

  • 4 large carrots

  • 1 large onion

  • 1 potato

  • 1 clove of garlic

  • 1 regular chicken bouillon cube (normally good for 3 cups of water, but we'll only use one)

  • 1 cup of water

  • 1 can of unsalted chicken broth

  • California Dry Marinade

  • Avocado oil

  • Cooking cream 35%

  • Pre-cooked bacon slices

To achieve this, I use a Weber Kettle and the accessory for the All-in-1 bbq . I preheat the kettle, without the All-in-1, by placing my lit charcoal everywhere, except in the center of the bbq.

Preparation :

  • Peel and cut the carrots lengthwise.

  • Cut the onions into rings, the potatoes into slices and the tomatoes in half.

  • Oil the vegetables well and grill them around the kettle (still without the All-in-1), with the pot filled with chicken broth (mixture of 900ml without salt + 1 cup of water + a cube) in the center.

  • Once the vegetables are marked on both sides, cut them up and put them in the pot of broth.

  • Make sure the broth covers the vegetables well.

  • Add the All-in-1 and place the lid.

  • Boil your vegetables for about 15 to 25 minutes, or until very tender.

  • Add liquid during cooking if there is not enough. On the contrary, if you have too much broth, remove some before blending everything.

  • When the vegetables are cooked through, let stand and blend with a hand blender until you get the desired texture.

Service :

  • Place the vegetable cream in individual bowls

  • Pour a little cooking cream on top (about 1 tbsp per bowl, or to taste)

  • Crumble bacon on top
