Crab on the BBQ? Hey! Yes, it's possible! But you have to act quickly because the snow crab season is short-lived. Lasting about 6 weeks, fishing starts in early April and you'll find the crustacean in fishmongers until mid-May. The crab you buy is generally already cooked. It therefore requires little cooking and a few herbs are enough to appreciate its delicate flavor. The BBQ method preserves maximum flavor. Plus, as always, cooking on the BBQ avoids dirtying dishes! No more pots!

Recipes :

Servings: 2 people
Preparation time: 20 minutes
Cooking time: 10 minutes

Ingredients :

4-6 sections of snow crab
1-2 lemons, cut in half and grilled
Flavored butter for cooking and serving
Spicy mayonnaise to accompany the crab

Flavored butter:

1 cup melted semi-salted butter
2 cloves of garlic, finely chopped
½ to 1 tsp of Caribbean dry marinade
1 tbsp. Bourbon-Maple sauce
3 tbsp finely chopped flat-leaf parsley
Pepper to taste
*Divide the recipe into 2 (cooking and accompaniment)

Spicy Mayonnaise:

⅓ cup mayonnaise
The juice of half a lime
1 tsp. Argentina spice
2 tsp maple syrup
1 tbsp finely chopped chives

Method :

Preheat BBQ to 400°F;
Light the burners for indirect cooking;
On the pale part of the crab, cut a rectangle in the shell of the legs using a paring knife (this will allow the flavors to reach the flesh during cooking);
Place the cut lemons on the direct area;
Place the crab sections on the indirect part;
Brush the crab with the flavored butter;
Cook for 3-4 minutes without opening the BBQ lid;
Remove the lemons and keep;
Turn the crab over, brush again and continue cooking for 3-4 minutes;
Brush one last time;
Serve with a squeeze of grilled lemon, remaining flavored butter and/or spicy mayonnaise.

Tips:

For this recipe, the body of the crab is not used; detach the legs before cooking, you can use the carcass for your shellfish stocks;

Calculate 2 to 3 sections of snow crab per person for a complete meal;

If crab is raw, double cooking time (12-15 minutes total);

The crab is ready when it gives off a sweet, mild smell;

Use crab meat in your risottos, sandwiches, pizzas, rolls, stuffed burgers and mac n' cheese...

Use leftover butter to toast croutons and mayonnaise for dips and sandwiches.
