As you know, I love sharing my passion for BBQ. So, I continue my duty as a "BBQ Master" and reveal new secrets to you; my secrets on cooking grilled cheese!
Firstly, to eliminate any ambiguity, when I say “grilling cheese” I mean halloumi or a similar cheese and when I say “all my secrets” I mean all my secrets to making your grilling cheese taste heavenly and cook to perfection! 😉
Now that the basics are established, here is what I advise you:
1. Seasoning
There are two seasonings that I recommend you use to make your cheese more than delicious: the California dry rub and the Argentina dry rub , both from BBQ Québec. The reason I tell you this is that these dry rubs are less salty than others and that's fantastic, because it makes them go well with the grilling cheese, which is generally quite salty. (By the way, if you want your grilling cheese to be a little less salty, I recommend soaking it in water for about twenty minutes just before cooking it.)
2. Preparation
Once you've chosen the dry rub you're going to use to season your grilling cheese, you need to prepare it for cooking. You can cook it whole, sliced, or on skewers. (On that note, if you want to save time and not "rack your brain," Rachelle Béry grocery stores now sell ready-to-grill halloumi skewers seasoned with BBQ Québec's Argentina dry rub! I swear, they're delicious!)
3. Cooking
Once your cheese is sliced, skewered or whole and seasoned, all that's left to do is cook/grill it. One of my tricks for this is to first cook it by letting it soften, slowly but surely, on the BBQ grill over indirect heat, then move it to the direct heat zone to grill. (The reason I let it soften first is that it's actually much less likely to stick to the grill that way.)
More specifically, I preheat my BBQ to about 400°F, then when the cheese has started to soften (after about 5 minutes), I switch zones to grill it. Once all sides are nicely grilled, all I have to do is enjoy the succulent cheese!
