Trio of festive bites
For me, Christmas means good food, good wine and good times with family. So, to create a semblance of normalcy, I went to IGA and got three ready-to-grill BBQ Québec products: turkey burgers, chicken wings and ribs and transformed them into small hot bites to then take them to my family members. This small gesture touched them a lot and delighted them.
In the spirit of giving back, I share my recipes with you in case you would like to do the same. Quick to make, these recipes are great ways to brighten up our loved ones' day.
Of course, you can also simply cook them to please yourself. ;)
Rib Pizza
Ingredients :
- 1 box of Quebec BBQ ribs
- 5 pita breads
- Commercial pizza sauce to taste (you can also make your own sauce with tomato puree, garlic and Argentina BBQ Québec spices )
- 1 cup shredded mozzarella cheese
Preparation :

Preheat BBQ to 350°F.

Cook the ribs on the BBQ using indirect cooking for about 30 minutes.

On a plate, let the ribs cool and shred them.

Cut the pita breads into about 8 wedges and spread the pizza sauce on each one.

Divide the shredded ribs and grated cheese over each tip.

Place everything on a BBQ baking sheet and cook for about 10 minutes.

Taste.
For a funky result, add peppers, olives or pineapple to your pizza slices.
Turkey and bocconcini meatballs
Ingredients :
- 1 box of signature burger, turkey, bacon, cheese from BBQ Québec
- 1 jar of mini bocconcini
- Balsamic vinegar reduction, to taste
- Toothpicks
Preparation :

Remove the turkey burgers from the freezer and let them defrost for about 1 to 2 hours.

Preheat BBQ to 350°F.

Form the thawed burgers into balls (one burger makes about 5-6 balls).

Place the meatballs on a BBQ baking sheet.

Place the plate on the BBQ and cook for about 25 minutes using indirect cooking.

Remove the plate from the BBQ and let stand for 10 minutes.

If large, cut the bocconcini into 4.

Using toothpicks, assemble the meatballs with the bocconcini.

Drizzle balsamic vinegar reduction over the top of the bocconcini for presentation.

Taste.
Mini Nacho Chicken Wings
Ingredients :
- 1 box of Quebec BBQ chicken wings (Tex Max for a spicy taste and Kansas for a spicy taste) soft)
- 1 bag of commercial saucer-shaped potato chips
- 1 cup shredded mozzarella cheese
- Mamacita BBQ Quebec Douce Nuit sauce, to taste
Preparation :

Preheat BBQ to 400°F.

Cook the chicken wings over indirect heat for 15 minutes, then grill for about 2 minutes on each side.

Remove the chicken wings from the BBQ and let them rest for about 30 minutes.

In a bowl, shred all the chicken wings.

Arrange all the chips on a BBQ baking sheet.

Divide the shredded chicken between each of them, add Mamacita Douce Nuit sauce to taste and sprinkle with grated cheese.

Cook on the BBQ using indirect cooking for about 10 minutes at 350°F.

Remove from the BBQ, let cool for a few minutes and enjoy.
