Portuguese BACON Tartlets

Tartelettes portugaises au BACON - BBQ Québec

INGREDIENTS

Dough

  • 1 lb bacon

Trim

  • 125 ml (½ cup) sugar
  • 45 ml (3 tbsp) cornstarch
  • 4 egg yolks
  • 1 egg
  • 500 ml (2 cups) milk
  • 30 ml (2 tbsp) maple syrup
  • Cake Seasoning (3 tbsp)
  • Lime juice
  • 1 muffin pan

PREPARATION

Dough

  1. Preheat your BBQ or smoker to between 275°F and 325°F.
  2. Cut the bacon so that it goes all the way around the muffin pan, then use the remaining slices to make the "bottom" of the tartlets. Place the bacon with the fat side up, so that it keeps a nice shape (the meat will shrivel more than the fat)
  3. Place on the BBQ for 15 to 20 minutes, until the bacon is semi-cooked (it should still be soft), blotting the bottom of the molds if necessary to remove excess fat.
  4. Meanwhile, go prepare the filling!

Trim

  1. In a saucepan, WITHOUT HEAT, mix the sugar and the cornstarch. (You can replace the cornstarch with flour, cornstarch is 2x more effective. Add double the flour if you don't have cornstarch.)
  2. Add egg yolks, egg and whisk until smooth. Add milk, maple syrup and Gâteau spices. Mix well.
  3. Heat the mixture, whisking and scraping the bottom and sides of the pot. Heat for about 10 minutes or until the mixture has thickened. The heat and movement (stirring) activates the starch. If you are used to it, go to a higher heat, otherwise go to a lower heat, the result will be the same, just a little longer.
  4. Remove the semi-cooked bacon tartlets and let them rest for a few minutes. This is the time to increase the temperature of your BBQ to 550°F.
  5. Slowly pour your mixture into your bacon tartlets, then make sure the BBQ is well above 500°F (still on indirect heat).
  6. Bake for 12 to 15 minutes or until the filling and bacon are nicely caramelized and crispy! Insert a toothpick or fork to test if it is cooked enough.
  7. Add lime juice to taste on top of the tartlet, and now it's time to bite into happiness!!!

Mr. Horacio Arruda, after several tests, here are, in my opinion, 2 tips that will allow you to instantly improve your Portuguese tartlet recipe:

1- Preheat the oven or BBQ to 500°F, the top rack in your BBQ is ideal for cooking at a very high temperature and thus allowing the tartlets to become crispy and cook to the center.

2- Replace the dough with bacon. Bacon is packed with protein and nutrients, which are essential for a good #BBQRetirement. Plus, the bacon fat helps distribute heat evenly throughout the tart during cooking and naturally oils the pan, allowing us to save the butter for other recipes.
