Pizza is a meal that is always a winner. It is fun to cook and it is one to eat, so there is no reason to deprive yourself of it! 😜 This recipe is easy to make, very refreshing and is perfect to prepare for a lunch or brunch.
By eating this delicious meal, it's clear that you will start your day or your week well! 😌 Here's how to make my recipe:
Required tools:
- BBQ Quebec vegetable rack
- Weber Plancha
Ingredients (for 12 small pizzas):
- 2 tomatoes
- 1 stalk of celery
- 75 g pork cretons
- 5-6 pitted olives, to taste
- 1 tbsp butter
- 150 g goat cheese
- 3 ½ cups corn flour
- 1 tbsp coriander
- 2 ¾ cups water
- 1 tsp. Booster BBQ Québec flavor enhancer
- 2 tsp. California BBQ Quebec Style Dry Marinade (1 tsp. per tomato)
Preparation :
- Preheat the BBQ to 350-400°F.
- Using a knife, remove the core of the tomatoes, without going all the way to the bottom.
- Fill the hole in the tomatoes with California dry marinade.
- Place the tomatoes on the vegetable rack, place everything in the direct cooking zone on the BBQ grill and cook for about 20 minutes. Set aside.
- Put the flour in a bowl, add the Booster, then pour in the water.
- Mix the mixture until you obtain a soft, smooth dough.
- Form the dough into balls the size of large ping-pong balls. Set aside.
- Place the Plancha on the BBQ grill and, when hot, melt the butter on its cooking surface.
- Place the balls of dough on the Plancha and flatten them to form patties about 4 inches wide.
- Flip the patties after 2 minutes, then 2 to 3 more times during the remaining 3 to 4 minutes of cooking. Set aside.
- On a work board, thinly slice the celery stalk, coriander and olives. Set aside.
- Place the tomatoes in a mixing bowl and mash everything together with a fork to create a sauce.
- Pour and spread the tomato sauce over the pancakes.
- Spread the creton, goat cheese and slices of celery, coriander and olives on top of the pancakes.
- Place the small pizzas in indirect cooking on the BBQ grill and cook everything for 3 to 4 minutes so that the cheese melts.
- Serve and enjoy! Happy BBQing!
