Cooking time: 5h30
Preparation
- Remove the membrane from the back of the ribs.
- Add a little mustard to help the spices adhere better to the meat, then put the dry marinade on the ribs.
- Marinate for two to four hours.
- Place the ribs in the barbecue for indirect cooking, at 225°F, for 2 to 3 hours, depending on their size.
- Remove the meat from the barbecue and place it in aluminum foil.
- Top with brown sugar, maple syrup, honey, hot sauce, butter and whiskey.
- Close the aluminum foil and put everything back in the barbecue for indirect cooking, still at 225°F, for 2 hours.
- Remove the ribs from the foil and grill them over low heat for about 20 minutes, turning them over to make sure they don't burn. While cooking the ribs, it's important to brush them with your favorite barbecue sauce, until they are nicely caramelized and well-sauced.
