A good piece of flank steak (the bigger the better!)

1 dark beer, your choice

Steven Raichlen's Malabar Steak Dry Marinade

Preheat the BBQ to 400℉, with an indirect zone.

Remove the flank steak from the refrigerator and unwrap it.

Using the syringe, inject the bib with the dark beer over the entire surface, leaving spaces of about 1 inch between injection sites.

Admire the fibers swelling!

Sprinkle the Malabar Steak spices on both sides.

Place on indirect heat until an internal temperature of 105℉ is reached.

Grill over high heat, 2 minutes per side.

Cut sections of about 3 inches, along the grain, then slice the resulting pieces against the grain, to the desired thickness.
Tips:

Inject the piece of meat while it is cold.

When reverse searing, there is no need to temper the meat before cooking.

No need to let it sit before serving either.

Effectivement pas besoin d’être compliqué. Ma blonde est une amatrice de bavette et elle confirme que c’est la meilleure qu’elle n’a jamais mangé. J’ai pris de la Criminelle de la Voie Maltée. Excellent sur mon Napoléon. 3 ingrédients, 15 minutes, que demander de mieux.
