Grilled flank steak marinated in IPA beer

Servings: 4

Preparation time: 4 hours

Cooking time: 45 min

Ingredients

  • 2 beef flank steaks
  • An IPA beer of your choice
  • Explorer dry marinade
  • 1 bunch of green onions
  • 1 tablespoon flour
  • 2 tablespoons butter

Preparation

  1. Marinate the flank steak in the IPA for 4 hours, or even better, inject it with the IPA (injection is much more efficient and faster than marinating the meat! Don't have your injector? OMG ---» Link to the injector
  2. Remove the flank steak from the marinade and remove the excess marinade. (Keep it, we will boil it a little later in the recipe to burn off the bacteria).
  3. Make a spice crust with Explorer.
  4. Cook at 250F for about 30 minutes depending on the thickness of the piece, until an internal temperature of 110F.
  5. Meanwhile, sauté the onions in a pan with a tablespoon of butter then remove when the onions are golden.
  6. Deglaze with the IPA and boil for a few seconds, set aside for a few moments.
  7. In another pan, make a roux, (mix 1 tablespoon of butter and flour and heat until golden brown) then add a little IPA (not too much) just enough to make a thick enough sauce, but not too much. As it heats, the sauce will reduce to the right thickness but it can take a while so don't add too much.
  8. Sear the meat on each side, which depending on the thickness, should raise the internal temperature by 15 to 20F. We aim for a final 130F for rare, but it can be eaten at any cooking time, you are the master of your destiny.
  9. Pour the sauce over the steaks, then stylishly top with shallots and off you go, your guests will want to stay overnight!

Jerk

Jerk Thigh Highs

Servings: 4

Preparation time: 12 hours

Cooking time: 1 hour

Ingredients

  • 8 boneless or bone-in drumsticks or thighs
  • Dry marinade Jerk from BBQ Quebec
  • 4 to 8 limes
  • 2 to 4 Jalapeno peppers
  • Coriander to taste
  • ½ cup soy sauce
  • 1 cup vinegar
  • 1 cup oil
  • 2 cups of water

Preparation

  1. In a large bowl, mix the vinegar, water, soy sauce, juice of 4 limes, chopped coriander and chopped Japapenos. Soak the drumsticks in the mixture for 12 hours in the refrigerator.
  2. 12 hours later, preheat the BBQ to 400F with an indirect zone.
  3. Remove from the mix and sprinkle the Jerk spices on your drumsticks, then place them in an indirect zone.
  4. Once the internal temperature of 170F is reached, place the drumsticks over direct heat and grill for about 2 minutes per side until they are nicely caramelized on the outside.
  5. Take out the drumsticks and, to taste, add extra drops of lime juice!

Sweet Kansas

Apple Juice Injected Pork Ribs

Servings: 8

Preparation time: 10min

Cooking time: 3 hours

Ingredients

  • 4 pork back ribs
  • Apple juice
  • Sweet Kansas Dry Marinade
  • Butter
  • Your favorite BBQ sauce (Champion sauce from BBQ QC is perfect here)

Preparation

  1. Using an injection syringe, inject the apple juice, taking care to inject between each bone.
  2. Rub your ribs with Sweet Kansas spices on each side of the rib then place them in indirect heat, bone side down, in your barbecue or smoker, at a temperature of around 275F for 2 hours or until they have an internal temperature of 160F.
  3. Wrap the ribs, bone side up, in aluminum foil, with the butter and additional Kansas rub on the bottom of the foil.
  4. Close everything up and return to the BBQ, still on indirect heat at 250-275F for about an hour. Wait until you have an internal temperature of about 205F or a very tender internal texture, as tender as butter, then take out your ribs.
  5. Unwrap your ribs, brush with your favorite BBQ sauce and return it to the BBQ for a few moments, so that it can caramelize well on your rib.
  6. Remove from the BBQ, get out the paper towels and enjoy!
