When you have time, on Sunday mornings for example, it's always nice to go outside and cook a nice BBQ lunch for the whole family. We pour ourselves a good coffee and, quietly, we get to work.
This crepe recipe is simple and effective and the delicious crepes you will eat will start your week off on the right foot, I guarantee it.
By the way, I always try to make recipes that are suitable for as many people as possible, so I'm very happy to tell you that these crepes are also gluten-free and have a low amount of carbs. (That said, if you prefer "traditional" crepes, you can also make this recipe using your favorite crepe recipe as a base. 😉)
Here's how to make this great meal:
Required tools:
Cast iron cooking plate (or skillet)
Napoleon Lunch Utensil Set (although optional, this kit is very handy for preparing this type of recipe)
Ingredients (for 4 pancakes):
1 green apple, sliced into small sticks
1 cup grated cheese
4 slices of ham
1 cup almond flour
¼ cup coconut flour
1 tsp baking soda
1 tsp xanthan gum
¼ cup of milk
¼ cup 35% cooking cream
1 pinch of salt
3 eggs
Softened butter, for cooking
Maple syrup, to taste or Blues Hog Raspberry Chipotle Sauce, to taste
Preparation :
Place the cast iron griddle (or skillet) on the BBQ grill and preheat to a maximum of 350°F (higher temperatures may cause the butter and pancakes to burn).
In a bowl, mix together almond flour, coconut flour, baking soda, xanthan gum and salt.
In another bowl, beat the milk, cream and eggs until smooth.
Transfer the bowl of liquid ingredients to the bowl of dry ingredients and mix everything together until you obtain a soft, smooth dough.
Brush the cast iron baking sheet (or skillet) with butter.
Pour the batter mixture into 4 portions onto the baking sheet (or into the pan) and, using a spatula, flatten each portion to form the pancakes.
Flip the pancakes after about 2 or 3 minutes of cooking to brown them on the other side. Keep the pancakes warm when they are fully cooked (for example, you can wrap them in aluminum foil to keep them warm).
Brush the baking sheet (or pan) with butter again.
Place the ham slices and apple sticks on the baking sheet (or in the pan) and cook and roast everything a little. Keep warm.
Place the crepes back on the cooking surface and add, in order, a slice of ham, then apple sticks on each one. Then add grated cheese, then maple syrup or Raspberry Chipotle sauce on top of each crepe.
Close the BBQ lid and let everything cook for 2 to 3 minutes, or until the cheese melts and the syrup (or sauce) caramelizes.
